Weekly Meal Planning Inspiration

For the week of September 8, 2014.

Hi! Did you miss me? I missed you and sharing my meal plans, research and life with you! It’s been a roller coaster around here. I don’t need to tell you that grief can ride in like a wave and knock everyone down, which is what happened in our home. Losing my uncle is not something I feel I will be “over” at any point in time, but I’m hoping to slowly make strides integrating back into normal existence. One baby step for me is to hop back on my blog and start writing again! The easiest way to do that is to start with meal plans!

Despite any sadness, celebrations, life changes or the revolving door that is our home with house guests coming and going, we have to feed ourselves and our littles. In order to do that, I meal plan! For this week:

Monday: Flounder, quinoa, and broccoli

Tuesday: Chicken Tikka Masala (Paleo) with rice (I add spinach to the dish)

Wednesday: Ground beef tacos with cheese, yogurt, avocado and salad

Thursday: Vegetable fried rice

I’m also learning about packing school lunches for my new preschooler! I’ll have more ideas for that as I get to them. Feel free to share your ideas too!

Another busy week in our home, with my parents coming to visit and my oldest turning FOUR!!! Her birthday party is this weekend too, with even more family arriving. It’s going to be a busy and fun time, which is more the reason to have a fool-proof meal plan in place so everyone is well fed and energized!

Monday: Tilapia (#9), rice, broccoli

Tuesday: BBQ chicken (baked), mashed potatoes, roasted Brussels sprouts

Wednesday: Southwestern ground beef casserole with peppers and spinach

Thursday: Vegetarian enchiladas using my favorite homemade sauce, black beans, spinach and goat cheese

1. This is not like your single girl adventures.

Back in the day, I would grab a water bottle and some gum, sit back with my journal, maybe my computer, and a good book to enjoy a flight. Now? I’m getting whiplash looking back and forth between my two toddlers, trying to meet their demands, cries, questions and requests for more entertainment. Doggie? Here he is. iPhone? Got it. Drink? One second. Pretzels? Okay. Stickers and a notebook? Sure! Movie? Coming right up. Phew.

2. Embrace the technology.

I was this close to purchasing the $18 Wi-Fi pass for our 90-minute flight. Ridiculous, right? You’d think, until a certain 3-year-old is whining for something else to do and asking what else she can watch because the only thing on the iPad is the $19.99 iTunes purchase of Frozen I made the day before we left. I didn’t pay for Wi-Fi, by the way. I let sibling rivalry do its job:

Mommy: “Baby sister, would you like to watch the movie?”

Baby: “Yes!”

3YO: “But I want to watch it!”

Mommy: “Okay!”

The result was two kids side-by-side, watching Frozen and being quiet as mice.

3. Don’t skimp on the lollipops.

The sucking of lollipops (or for my kids – biting / chewing / gobbling) helps little ones’ ears when the plane is taking off and landing. I did not assume one lollipop per kid was going to be enough and I was right. I had a whole section of my backpack dedicated to all manner of flavors, all organic and all containing vitamin C.

I actually think I should have received an award, or perhaps a standing applause from the whole plane when I single-handedly stopped the ruination of another 90-minute flight. A child we’d befriended in the airport was sitting behind me, perfectly content. Until takeoff. The screaming and wailing began and I quietly asked his dad if he could have a lollipop. When he nodded, I reached into my treasure chest and pulled out a lovely child-silencer. He stopped crying, took the treat, ate it and promptly fell asleep for the duration of the flight. Powerful, powerful things lollipops are.

4. All hail the Family Restroom.

I can’t say enough about the family restroom. They’re not everywhere, but in the big Atlanta airport we had our layovers in, they were pretty widely available and we may have visited every single one. I can’t tell you what it’s like to wait for the single handicap stall in a restroom to be available, while my 3-year-old lifts her dress up and holds her private area whining about how “it’s going to come out”. What to do? The stroller, 2-year-old, 3-year-old, mommy, and bags were not ever going to make it into a single stall! Family restrooms to the rescue! Entering a private restroom, unloading our stuff, giving everyone their turn, and not being bumped, or hurried, or looked at for taking up so much time and space was just what we needed to get our family put back together.

5. Pressure and sippy cups don’t mix.

I’m still glad I brought empty sippy cups on the plane with me. It gave me somewhere to dump my children’s drinks when they no longer wanted them. It also gave me somewhere to put my youngest’s beverage when she thought that moving it to and from the tray table was the best game ever (as it sloshed all over her dress)…

However, it wasn’t long after the take-off of flight #2 that my 3-year-old loudly pointed out her sippy cup was bubbling all over the place. Augh. Cabin pressure. I was forced to drink watered down apple juice to stop it from flooding our section of the airplane. Waiting to add liquid to a sippy cup is a great idea… I won’t forget.

6. Travel with your own garbage bags.

I know the flight attendants come around collecting trash at least five times during a flight, so why would I need a garbage bag? Remember the lollipops? Wrappers, sticky sticks, empty snack bags, dirty wipes from wiping down trays and sticky hands… There’s really nowhere convenient to put these things. Even a sandwich bag would be convenient to keep it all together. I learned this after one of four flights, delicately wrapping sticky lollipop sticks into wrapper and balling them up into wipes and finding a safe place to put them, only to be handed another and another.

7. Everything has its place and there’s a place for everything.

I organized my backpack brilliantly. It wasn’t too hard to get to a snack, a cup, a toy or a technology device. But what about after a child is finished with it? Those little pockets in front of me look pretty enticing. I’ll just pop it in there. Or toss it in my purse and look for it later. Until the plane lands. I’m scrambling to calm my youngest who’s begging me to pick her up. I’m helping my oldest get her seat belt off. I’m zippering compartments and grabbing our bags. Then I think, “Where’s the iPhone? Where’s the iPad? What did I do with that bag of snacks?” At one point I found the iPhone under the seat. I can’t imagine what I’d do if I’d lost that! I found toys between seats and stickers in the pocket in front of me. Nope, never again. Finished with the iPhone? Back in it’s zippered pouch. Finished with a snack? Back in its appropriate compartment. Only the bubbling sippy cups stayed out, hanging off the side of the bag to be dumped before the next flight!

8. Overpack, overprepare.

I definitely threw in a dress for each girl, rolled up tight at the bottom of my bag. I was so proud of myself for remembering that for all the “just in case” possibilities. You know what I forgot? Clothes for myself. I mean, even a shirt!? Thankfully, I didn’t need it. But my sweet, wonderful friend, who was also traveling with her toddlers for the first time, did need it. I couldn’t imagine what I would do if my baby had thrown on me and had to sit in those clothes. She, of course, handled it like the super-mommy she is! Future notes: roll up a shirt for mama and stick that in the bottom of the bag, too!

So, maybe I had way more snacks than I needed, but they made me feel safer. Maybe I packed more technology products than were used, but they were available, if necessary. For our next trip (yes, there will be another), I’m going to pack just as much and be just as prepared, if not more.

Oh, and those essential oils I posted about before our trip? Not a problem going through TSA. I had peppermint and joy with me, as well as my Thieves Spray. I sprayed our spray at the beginning of every flight. They didn’t really like the attack-spray-method, but no one got sick! I thought with the recycled air, germs and lack of sleep, it might be inevitable to get sick. When we didn’t, I became more of a believer than ever! I also loved arriving to my destination with small bottles of essential oils waiting for me in my checked luggage. Having them during our trip made me more confident that I could take care of my girls and myself while we were away from home.

I’ve placed Thieves on sores or painful areas in my mouth and had them numb completely. When the numbing sensation wore off, the pain was gone.

Tuesday's Talk: Thieves You Want in Your Home

Thieves is named after men who were able to pillage areas of Europe while a plague was killing people. In exchange for a lesser sentence, they told the king their secret: As spice dealers trapped in Europe because the ports were closed, they knew exactly which spices to use to protect themselves from getting sick. They ran out of money and resorted to stealing. They were protected by the herbs and spices they put on their bodies.

Depending on the company, Thieves oil blends may contain different oils. The oils contained in Young Living’s Thieves blend are: clove, lemon, cinnamon, eucalyptus radiata, and rosemary. Each one of these oils has incredible health benefits and combined they make a powerful blend to protect and heal our bodies.

One study in 2006 addressed cinnamon oil specifically and declared it to have the most potential bactericidal properties. Oils that also performed well in this study were: clove, lemon and rosemary oils. Interestingly enough, these are all oils contained in the Thieves blend.

Being able to use thieves to kill serious bacterial strains in our bodies is absolutely incredible. Using it your home can also have a two-fold benefit, though. For one, using antibacterial soaps and cleaners throughout your home is dangerous and can increase antibiotic resistant bacteria (that means when you need the antibiotics, they don’t work). Using a product like Thieves in your home stops these harmful antibacterial agents from robbing you of good bacteria and increases the likelihood that antibiotic resistant bacteria will not be a threat to your health!

The New York Times spoke to this exact subject in 2007, stating that cinnamon oil, in particular, has antimicrobial properties, perfect for household cleaning and hand washing. This is a great replacement for those antibacterial products that have become so prevalent.

For the week of August 18, 2014.

We’re back! Incredible week with friends and babies was had by all and now that Monday has hit (and it hit hard), I’m back to meal-planning! Many families are sending kids back to school this week. I’m sure having some meals planned ahead of time to prepare for your family will help ease into the new routine.

Monday: Roasted salmon (on sale at Martins this week – Wild Alaskan Sockeye $10.99/lb), rice and coleslaw (I’ve been loving this coleslaw recipe!)

Tuesday: Easy roast chicken with garden fresh zucchini, potatoes and carrots

Wednesday: GF Mac n (goat) cheese with ground beef and spinach

Thursday: GF vegetarian pizza (I’ve been using this crust recipe with my favorite all-purpose bread flour by Jules – I also double it)

Weekly Meal Planning Inspiration

For the week of August 11, 2014:

As I post this, I am on vacation with my wonderful friends, the first mom friends I made when I moved to Virginia and had my first baby! This reunion has been in the works since January. One mom with 2 toddlers from Alabama. Me, with 2 toddlers from Virginia. And meeting up with our dear friend and her toddler, in Texas! Phew!

Before we embarked on this trip, they asked me to do a meal plan for our visit. It was the least I could do! We went through my blog and picked out some of our favorite recipes. I threw them on a spreadsheet, separated out the ingredients, and made a shopping list. Here’s what we will be enjoying this week:

Night 1: Fish tacos with lots of toppings and steamed vegetables

Night 2: Chicken tikka masala with rice and cauliflower pilaf

Night 3: Beef stroganoff with spinach (slow-cooker)

Night 4: Tomato soup and grilled cheese sandwiches (GF bread & goat cheese)

Night 5: Spaghetti and meatballs with spinach

Most of these can be made pretty quickly in the evening after nap time and I’m looking forward to cooking them with my “sisters”.

So, what can I add to this? Well, essential oils of course!

I made Thieves spray to spray our throats, necks, hands and the airplane seats. It’s simple!

In a 2 oz dark glass bottle put:

– 1/2 teaspoon witch hazel
– 10-15 drops of Young Living Thieves oil
– distilled water to fill the bottle

I already tested it out. Smells great and I’m so confident in its ability to keep us healthy!

My carry-on will only have the Thieves Spray, a few drops of Joy in a small rollerball bottle and my small 5 mL bottle of Peppermint. I’m hoping there will be no problems getting through security with these!

My checked baggage will have small amounts of the oils I use everyday. I diluted some with almond oil, per the Essential Oils Pocket Reference guide. About 5-7 drops of each oil in separate rollerballs should last us for our 5 nights away from home. I also threw in some full size bottles of Lemon and Citrus Fresh to put in my water while I’m away.

I am fascinated by the history of certain medicinal treatments. Take Frankincense for instance. It was mentioned in 5th century BC by Herodotus. It’s also mentioned in the Bible, which goes waaayyyyyy back. Frankincense was brought to baby Jesus when he was born, which I always thought was a weird gift for a baby. Now, I know better.

For the week of August 4, 2014:

While August seems like it should still be “summerish”, it’s also filled with back-to-school energy, our oldest daughter’s 4th birthday, vacation and visitors. A lot to plan and prepare for!

For this week, we’re trying to keep things simple as I prepare for my first solo trip with both toddlers on an airplane! Any tips are appreciated! Because we are leaving Friday, I have only meal-planned through Wednesday night. Thursday will have to be take-out dinner so I can pack and clean and gather my thoughts!

Monday: Tilapia (#9), rice and green beans

Tuesday: Baked Chicken Drumsticks (on sale at Martin’s) – new recipe to us – served with salads and quinoa

Wednesday: Meatloaf in muffin tins (new recipe), mashed potatoes and roasted cauliflower

Daddy-Daughter Dates

I used to read books as a teenager where the teenage girl had special dates with her dad and I’d wistfully imagine how cool that would be. It wasn’t something that actually happened in my childhood or teenage years and I’m okay with that. However, it is something that I would like to see in my daughters’ lives.

When I’ve brought it up to my husband, he has said it sounds like a good idea, but when and where and what and how? I just assumed we’d figure it out one day. Then I saw this video and said, “We HAVE to do this.”

It’s sweet, right? I can’t believe it’s so controversial. Where’s the controversy? I want our daughters to grow up knowing how a man should treat a woman. Not just because my husband takes me on dates or is kind and respectful towards me, but because he takes them out and is kind and respectful towards them.

So, we did it. It was so cute to see our 3 1/2 year old get so excited about her date with her daddy. She talked about getting spaghetti and meatballs and ice cream and she did her hair with clips and put on a pretty necklace. She felt beautiful and special and she should!

While it was nowhere as elaborate as the video above, it was a special evening for the two of them that none of us will ever forget. They had Italian for dinner (something Mommy and baby sister can’t eat). Then they went for ice cream and walked the downtown main street looking in shop windows and talking the whole time. The talking is what excites me the most. We have a child who loves to talk about everything and anything. She seems insatiable when it comes to understanding life and everything around her. Having one-on-one time with us gives her the opportunity to have the undivided attention that allows her to feel heard and seen.

My husband is already talking about his first date with our youngest and what they should do and where they should go. I’m thrilled to see him looking forward to this time with his girls. I look at the big picture (as I do with all things) and see them growing up with these special times with their Daddy. I hope that they tell him all kinds of things and ask him lots of questions. I hope they grow together in a relationship that is deep and genuine, one that lasts beyond our lifetime. I hope when they’re teenagers they don’t look to boys to receive affirmation or confidence, because they’ve been affirmed and uplifted at home. I hope when they’re young women, they can look at their Daddy and say, “Thank you for always making me feel so special.”

Dads have that power. Moms do too. We can take time out of every day to truly hear and see our children. We can get down on their level and play their games, answer their questions and listen to their stories. Being a parent carries so much responsibility that it can be overwhelming to know what we “should” do. Most importantly, though, we can remember to know our kids and let them know us. Nothing can truly accomplish this like time.






And the memories?


They’re going to be with us forever!
