I have so many favorite meals, but I am always looking for new things. I like the inspiration of a new recipe, new flavors and new scents filling the house. Can you relate?
Here they are for you and your inspiration:
Monday: Tilapia tacos with refried beans. I love the simplicity and coolness of tacos – lots of sides, mix and match and some great beans on the side. I have been canning my own beans, so I use the black canned beans and heat them with some oil and chicken broth until they’re mashable. Then I sprinkle some yogurt cheese on top and serve.
Tuesday: Chicken, asparagus, broccoli stir-fry over rice
Wednesday: Shepherd’s pie (this recipe says it’s a slow cooker recipe, but most of it is done on the stove anyway)
Thursday: Quinoa kale patties with roasted brussels sprouts – I haven’t made these patties in a long time, but they’re sooooo good!
